The term barbecue actually was coined by Hernando De Soto when he landed in the Caribbean and discovered the natives cooking meat over open flames on big wooden racks. He called it "Barbacoa" which is an Arwak Indian term that translates to, " to cook over coals." It is funny how some guy cooking his bratwurst in the parking lot of Lambeau Field in Green Bay Wisconsin before a Packer game can be connected with the great explorer De Soto and the Arwak Indians!

When we think of Mexico, our minds imagine tacos, the sombrero, and the Spanish acoustic guitar music and without any hesitation, the famous Jalapeno pepper. Jalapeno pepper barbecue sauce has conquered beyond the borders of the United States, making it one of our favorite sauces to use for an authentic Mexican barbecue experience.
If you are one who indulges in a tangy, acidic taste sensation that puckers up your taste buds, then you are certainly due for an experience with this south of the border gem sauce.
Mix up a sauce recipe of freshly squeezed lime juice, garlic and sweet onions, a can of tomato base, as many finely cut jalapeno peppers as you can handle in a sauce pan and simmer it for about an hour.
