Nobody actually knows when, or where, bbq sauce come from. Though some say Christopher Columbus brought it back from Hispanola in the late fifteenth century, and it's derived from barbacoa, an Aztec dish, still served in Mexico today on holidays and special occasions, the Chinese and jap versions of bbq sauce predate the Aztecs, and Columbus, by centuries. Most likely, it was discovered before recorded history, when our gatherer ancestors started growing snatch crops, and come across spices. Where ever and when ever barbecue sauce entered culinary history, it has become a staple condiment around the planet.
