The Scottish families that immigrated to the southern state of North Carolina primarily settled in Williamsburg County where they are most well known for their vinegar and pepper based barbecue sauce recipes.
The most well known present day Scottish barbecue clan is the Brown family. However, the Scott and McCabe like those of the German families are known for remaining true to their heritage.
This easy vinegar and pepper based bbq sauce is the first and the oldest recipe of the Southern Carolina sauces.
Another type of barbecue sauce discovered in South Carolina, the tomato based version, was a combination of the original vinegar and pepper based sauce combined with ketchup. Because of the popularity of this barbecue sauce recipe, ketchup became more available as a condiment starting in the year 1900.
